do you really grow your own ingredients?
Yes, at Van Dieman Brewing, we truly grow our own ingredients. Our farm, nestled in Tasmania's northern midlands, is where we cultivate hops, barley, and wheat used in our beers. This approach to brewing, where ingredients are harvested right where they are brewed, is a cornerstone of our ground-to-glass philosophy. We also utilise on farm spring water and indigenous yeasts to brew with. It ensures the freshest possible ingredients go into each batch, reflecting the true character and quality of our Tasmanian estate.
what’s an estate beer?
An estate beer is a unique type of beer where ALL of the ingredients used in brewing are grown, sourced and processed on the same estate or farm where the beer is produced. At Van Dieman Brewing, our estate beers are crafted using hops, malted and raw cereals, water & yeasts sourced directly from our farm in Tasmania's northern midlands. This approach allows us to create beers that are deeply reflective of our land's specific terroir, offering a distinct taste and quality that can only be achieved from such a localised and integrated brewing process. Estate beers represent a harmonious blend of agriculture and brewing artistry, embodying the essence of the land they come from.
what is spontaneous beer?
A spontaneous beer is a type of beer fermented using wild yeast and bacteria present in the environment, rather than cultivated strains. This process, often used in making traditional Belgian lambics, involves exposing the beer to the open air so it can naturally inoculate with local microflora. We utilise a large vessel known as a Coolship (koelschip) that we allow wort (unfermented beer) to cool outside of the brewery - often in unique places on the farm - and allow these indigenous yeasts and bacteria to fall onto the cooling beer to innoculate it for fermentation. Within 24hrs we transfer to oak barrels an allow the beer to rest for upwards of 4 years. The result is a beer with unique, complex flavours that are deeply influenced by its specific brewing location.
